Many of you might have come across the term HACCP in the context of the hotel and culinary industry, but may not be aware of its meaning or true significance. It is an abbreviation of Hazard Analysis and Critical Control Points, a globally approved system that helps chefs, culinary professionals, caterers, restaurant and hotel managers, etc., identify, prevent, and control food safety hazards. HACCP matters immensely because good food is never just about how delicious, well-presented, or innovative the dish is; food safety is a critical aspect too. Read on! What is HACCP? Referred to as HACCP in short, Hazard Analysis and Critical Control Points provides a preventive approach towards food safety. It is an internationally recognised framework that enables culinary establishments to proactively identify potential hazards and enforce strict controls to prevent them from causing harm to customers. HACCP in hotel management plays a pivotal part in every stage of the food production process, right from the receipt and storage of ingredients to the cooking, heating/cooling, serving, and transportation of food. Below are the three main categories of food safety hazards that HACCP helps target: Biological Hazards – These include bacteria, viruses, moulds, parasites, and other microorganisms responsible for spreading foodborne diseases. Chemical Hazards – Residues of cleaning chemicals or pesticides, contamination from lubricants, cross-contact with allergens, etc., can make food harmful to ingest. Physical Hazards – These include glass fragments, plastic pieces, metals, or other foreign objects that may enter food accidentally. Therefore, HACCP is not merely a theoretical concept, but a system with practical applications in the global hospitality industry. Learning what is HACCP teaches students of hotel management colleges to maintain food quality, safety, and hygiene in a professional kitchen environment so as to protect the health of customers and guests. 7 Fundamental Principles of HACCP Now that you know what is HACCP, you must also understand its fundamental principles. The following are the seven key principles of HACCP in hotel management, which form the core essence of food safety management: 1. Analyse Potential Hazards You must identify all possible hazards that may arise throughout the food production process and potentially affect its safety. Examples include improper handling of raw materials, incorrect storage temperatures, cross-contact with allergens during food processing, etc. 2. Determine Critical Control Points Once you have identified the potential hazards, you must determine Critical Control Points (CCPs) to prevent, remove, or lower the risks to acceptable levels. For example, you can implement a CCP to check the freshness and validity of the ingredients you receive, or make sure that the food reaches a suitable internal temperature while cooking to prevent biological hazards. 3. Set Critical Limits Later, you must also set a critical limit for every CCP. It defines the acceptable range for crucial food production parameters, such as cooking time, temperature, or acidity/PH levels, among other factors. For instance, you can fix what the minimum or maximum temperature should be while refrigerating cold ingredients. Professional kitchens require accuracy in measurements instead of guesswork. 4. Define Monitoring Procedures After setting the critical limits, you must monitor them regularly to confirm that they are meeting all the CCPs. For example, you can maintain a daily checklist or use digital tools to check the validity dates of ingredients, refrigeration temperatures for the safe storage of perishable items, and other important elements. 5. Establish Corrective Actions Sometimes during the monitoring process, you may realise that the critical limits for a particular CCP are not in the prescribed range. In this scenario, you need to take corrective action to handle the issue. It is better to have a set of pre-established corrective actions in place for instant redressal of a problem. For example, you may have to isolate, discard, or reheat the affected food, depending on the situation. 6. Implement Verification Processes It is necessary to review the HACCP plan’s effectiveness periodically. This may involve verification processes like audits, testing, inspections, record-checking, examining the equipment, etc. These steps can help you ensure that everything is under control. 7. Maintain Records & Documentation You must maintain detailed and accurate records for smooth HACCP implementation. It can provide evidence that the establishment is following all food safety protocols. HACCP documentation must include things like cleaning schedules, temperature logs, corrective action reports, inspection records, etc. Why is HACCP Knowledge Necessary for Culinary Students? Food safety is not simply an academic requirement for culinary arts students, but an essential professional skill that they must possess to work in the food production industry. A chef’s job goes far beyond the creation of dishes that please the palate or impress with their visual presentation. They also have to ensure that the food is completely safe for the guests to consume. Understanding what is HACCP helps culinary students cultivate the habit of implementing proactive risk prevention strategies at all stages of the food production process. It equips them with practical knowledge about various kitchen procedures and operational standards, such as: Reasons to handle raw and cooked ingredients separately Importance of proper storage temperatures Significance of cleaning and sanitation protocols How personal hygiene is linked to food safety, etc. Why Should Hotel Management Students Be Acquainted With HACCP? Hotel management graduates eventually go on to work for hotels, restaurants, resorts, airlines, cruise liners, catering businesses, banquet facilities, food & beverage companies, etc. Supervisors or managers in such hospitality establishments have to ensure consistent implementation of food safety systems across multiple cross-functional teams.
